Etna DOC Brut Gaudensius Blanc De Noir Firriato 75 cl
This great sparkling wine with the perlage of Etna in Firriato style, complex but, at the same time, of rare elegance, the first Classic Method of Firriato. A perfect union between Nerello Mascalese and the Etna area, Gaudensius Blanc De Noir is a truly evocative Classic Method, an absolute example of style and elegance. The grapes are harvested by hand in the second week of September and immediately taken to the cellar where, after soft pressing of the whole, non-stemmed bunches, the vinification begins, off-white, without contact with the skins. The refermentation in the bottle, in contact with the yeasts, lasts for over 36 months, with frequent and manual riddling.

The "Gaudensius" Blanc de Noir, branded Firriato, presents itself when tasted with an aristocratic straw yellow color with rich nuances tending towards golden, has an intense and fruity nose of ripe Sicilian citrus fruits, brioche and peanut butter, star anise and marzipan with rich mineral hints as a backdrop. Complex, full-bodied tasting, with excellent structure, it combines the delicate and fragrant part with the marine verve, accompanying a tasty finish of almond and currant.
COMBINATIONS
Perfect wine for a sumptuous aperitif based on canapés and savory pies, it is delicious with beccafico sardines but also with ricotta and spinach ravioli seasoned with butter and sage.
