Dal colore mogano scuro, brillante, luminoso, trasparente, il suo aroma rotondo, pulito, elegante, distinto, vinoso con ricordo al passato. Alla bocca si incontra equilibrato, morbido senza spigoli, persistente, caldo e profondo con molte sfumature al mogano vecchio.
 
Cardenal Mendoza e' un Brandy Solera Gran Reserva, la piu' elevata nominazione con la quale vengono etichettati i migliori Brandy spagnoli dal Consejo Regulator de Brandy de Jerez (Consiglio Regolatore del Brandy di Jerez).
