In the village of Valcasotto, Beppino Occelli matures his finest cheeses, produced in the Langhe region or selected from the mountain pastures of the Cuneo Alps. In the ancient cellars, the air, the purest water, the constantly monitored humidity, and the passage of time work in perfect harmony with his maturers to shape the identity and personality of each cheese. Made from goat's and cow's milk, "Cusiè"® ages for at least four months in the Valcasotto cellars on wooden boards in the valley. Beppino Occelli also recommends Cusiè in the kitchen as a ravioli filling, shaved over hot pasta dishes, or in cold seasonal salads.
