Pecorino Sardo DOP "Maturo" Cheese Sepi The quality of Pecorino Sardo is guaranteed by the Protection Consortium. From an ancient tradition, it is produced with milk sourced exclusively from Sardinian farms, and is now recognized as one of the most representative cheeses of the Sardinian dairy scene. Pecorino Maturo is aged for a minimum of 60 days. It is excellent as a table cheese, in the preparation of first courses and side dishes, or paired with more flavorful foods such as pancetta and speck. Recommended wines to pair it with include Vermentino di Gallura and classic Cannonau. It is also available in various vacuum-packed formats. The cheese is white in color, tending towards straw yellow. The young wheels have a tender and elastic texture; the mature wheels are firm, with some graininess. The vegetal aroma is reminiscent of live pastures. The flavor is pleasantly spicy.
