Following the immediate success of Barrique di Ciliegio 12 mesi, now one of the best-selling grappas in Italy, Master Distiller Roberto Castagner decided to create a vertical aging program exclusively in cherry wood, spanning 5, 8, and 10 years, drawing from cherry barriques that have been resting in his cellar since the distillery's founding. The result is a collection that chronicles the magnificent evolution over time of the distillate, which ages in this exclusive and extraordinary wood, yet rarely used compared to oak. Cherry wood is rarely used for the overall aging of a distillate due to its greater difficulty in handling, as it tends to yield quickly and therefore dominates. It also causes greater evaporation losses than other woods. However, it can impart a warm color and a distinctive, unparalleled organoleptic profile to those who dare to use it and know how to masterfully dose it. The result is a range of spirits in which different aging times give them different structures, complexity, and aromatic bouquets, from which you can discover your favorite.
