Aged Pecorino di Amatrice from the Petrucci Brothers Amatrice Dairy. This pecorino is made according to the ancient recipe used by the ancient Amatrice shepherds. Pecorino Riserva is one of the most prestigious products in our production line. It is an excellent pecorino made from carefully selected milk sourced exclusively from flocks grazing in the highlands of the Gran Sasso and Monti della Laga National Park. Like all our products, it is processed within 24 hours of milking. This aged pecorino is made according to the ancient recipe used by the ancient Amatrice shepherds, present in the Monti della Laga area. This pecorino captures the aroma of the pastures that nurtured the animals, the mark of the terroir, and the hallmark of the cheesemaker's expertise. The environment, the land, and the pure air are formidable tools for advancing the maturation process, which reaches its optimum state after 6-7 months. The balanced blend of enzymes produces a pecorino cheese with a cooked, crumbly texture and a straw-yellow color with a few holes. The exterior features a bark-brown rind, resulting from both the maturation process, which still takes place, as per tradition, on wooden boards, and the treatment of the outer surface with oil and vinegar. INGREDIENTS: Cheese produced in Italy with pasteurized whole sheep's milk, with the addition of rennet, salt, and lactic acid bacteria. Weight: approximately 2.2 kg.
