Chardonnay Sophie Manincor organic 2021 75cl

Chardonnay "Sophie" is an enveloping and full-bodied white wine on the palate, however elegant in structure, with persistent mineral notes. produced with a blend of 94% Chardonnay, 4% Viognier, 2% Sauvignon Blanc grapes. The origin of the vines is half of the grapes located on the Lieben Aich estate in Terlano, the other half from Mazzon di Caldaro. The vinification involves the destemmed bunches left to macerate for four hours in the press in order to draw aroma and structure from the skins. The pressing took place very slowly and delicately to maximize fineness. Fermentation took place in wooden barrels, partially spontaneously thanks to indigenous yeasts. During the nine months of refinement in contact with the yeasts, both aroma and taste were enhanced.
