Cooked grape must, aged wine vinegar.
Aging:
In oak barrels and barriques with the addition of already aged balsamic vinegar taken from batteries of centuries-old barrels.
Pairings:
First courses of fish and white meats. Seafood stews and sweet and sour sauces for meat fillets. Entrances of cheeses and cured meats as an aperitif.
