In the Kizan Chiguma Nishiki version, it is a distillate of large buckwheat, a type born in 1973 thanks to the revolutionary vision of a small distillery, Unkai, which decided to replace buckwheat with the ingredients traditionally used for the production of Shochu. The wheat used comes from the Nagano prefecture, for a taste that always respects the long Japanese tradition.
