Cuvee Speciale Spumante Müller Thurgau Millesimato Vigneti delle Dolomiti of the Cavit winery is obtained from the vinification and sparkling process of grapes of the autochthonous Müller Thurgau variety, grown in different plots. The reference vineyards include the Cavedine Valley, the Cembra Valley and the Brentonico Plateau. In the cellar, the grapes are subjected to a delicate pressing, followed by a quick cold maceration on the skins. Alcoholic fermentation takes place strictly at a controlled temperature in large steel tanks. For the refinement on the yeasts the company focuses on the Martinotti (or Charmat) method, which allows the wine to refine during the second fermentation in autoclave, maintaining its aromas.
