THE NOBLE AMARO OF THE SHEPHERDS

The very elegant amaro, linked to the history and ancient customs of the area from which it takes its name, Amaro Sibilla was invented in 1868 by Girolamo Varnelli, thanks to his great herbal knowledge. The intent was to create a product that could act as a " remedy " for shepherds dedicated to transhumance, to warm them in the cold nights away from home and comfort them. Even today this amaro is produced following the original recipe, obtained from a decoction of gentian and other medicinal plants over a wood fire. It is sweetened only with honey from the Sibillini Mountains , and is then refined and filtered for a long time before bottling. For the great historicity and the unchanged quality of taste, this Amaro Sibilla is still today recognized by the public and critics as one of the absolute excellence of the category.

Dark brown color, bright and consistent, it has intense aromas of bitter herbs, dried fruit and walnut husks on the nose, in a background in which coffee and honey are recognized. The gustatory impact is initially sweet, and then surprises those who last for several seconds with an intense and persistent bitter and tannic sensation, attenuated by an elegant finish of chestnut, coffee and vanilla.
